Picking up steam

This week has been wonderful. Something in me just clicked! After what seems like months of trying hard to eat healthy but nearly every night succumbing to a bag of nuts, cookies, etc., this week it all finally made sense again. I’ve been eating delicious eats, stopping at just one serving, and got rid of those snacking demons at night. This sudden change in attitude has been puzzling me – how can my mindset change so drastically for no apparent reason? I think I figured it out! It’s this…

No, not spices. It’s my new kitchen (with this awesome built-in spice drawer) that makes me smile every time I walk into the house and I cannot wait to get in there and cook something healthy and delicious! Why waste calories on stupid stuff when you can have a satisfying meal? There are so many recipes I’ve marked over the past month and a half of construction, I don’t have enough meals in a day to execute all of them. But I’m up for the challenge! :D Now, should we take a look at that spice drawer again? ;) [And yes, I alphabetized them!]

Yesterday the black peppercorns were the star of dinner.

I haven’t participated in CEiMB in almost 2 months now. This was a great recipe to dive back into it! I used to hate pork but pork tenderloin turned that around – it’s lean and tender and I’m pretty sure it’s one of my husband’s favorite meats (we discovered it together). For this reason, when I saw that Rachel of Rachel Hearts Food chose Ellie’s pork au poivre as this week’s featured recipe, I was more than happy to jump back on the CEiMB wagon. :mrgreen:

This recipe was easy and had a very short ingredients list – perfect for a weeknight meal!

Gena’s carrot fries (found through Thinspired) made for a perfect side dish! Adam was making fun of me when I started making these but I knew they’d be amazing. I cut up a bunch of carrots (maybe 3/4 lb?) and used 1T of coconut oil. I think I’ll cut down on the oil even further next time, there seemed to be more than ample amount of it, but let me tell you… there will be a next time. Soon! Adam quickly stopped making fun of me after tasting these babies. They reminded us both of sweet potato fries due to a subtle sweetness from the coconut oil (I think that’s an important ingredient!). SO so good!! Adam said to add this recipe to our short list of “favorites.” Yup, carrot fries need to be on our favorites list. I’ll leave it at that. :)

Did I mention this pork au poivre was great? It was! Tender, juicy, flavorful – we both loved it!

MORE SNACKS

I finally got my last package of the bake sale for Haiti winnings. This one included some peanut butter/choc chip “granola bars” and banana bread.

These granola bars are basically bar cookies… and they are amazing!!!!!

It took a lot of will power to only eat 1. They are full of oats, seeds, choc chips and peanut butter – so dense and buttery. Oh yeah, there IS butter in them. Like I said, not exactly granola bars but damn, worth every calorie for sure! (I can provide you guys with the recipe if you’re interested).

Breaking in the kitchen

Thank you all for being patient with me over the past few days. I really needed to take a little time off to organize the new kitchen and enjoy all the fun activities we had planned for the weekend. I took so many pictures and have so much to share with you. I decided to start with my very first (real) meal in the new kitchen. I think it was a great success! :mrgreen:

I really wanted my first meal to be elaborate. I wanted to spend hours in the kitchen- chopping, mixing, stirring, baking. When my parents in law mentioned they wanted to come visit us this Sunday to see our new kitchen, Adam and I agreed it would be a great idea to cook for them. I browsed through cookbooks to find that “perfect” recipe. Oh, how I missed this!

Since dinner was going to take a while to prepare, I knew I wanted dessert to be quick and easy. Ellie Krieger’s almond/cherry chocolate clusters is definitely one of my go-to desserts. The recipe has only 3 ingredients and comes together incredibly fast. The best part – it’s SO delicious. How can it not be – it’s almonds, cherries and chocolate!! :)

While I was making the sauce for the lasagna (oops, did I spoil the surprise? :lol: ), Adam decided to open the champagne my PILs brought.

After hours in the kitchen, dinner was finally ready. I loved that I was able to stay in the kitchen the entire time, yet could 100% participate in all the conversation. The new kitchen is definitely perfect for entertaining!

I used this recipe from The Best Light Recipe cookbook for meat & cheese lasagna. I really trust this cookbook – every single thing I’ve made from it was absolutely perfect (read: tastes like the real thing).

I added some mushrooms to the sauce (when adding the tomatoes) and baby spinach (a few minutes before taking it off the stove and adding the basil) for added nutrients and because I like both (and happened to have them on hand). I think even more veggies would be great – they would bulk up the lasagna and add new flavors and textures.

The lasagna was SO good! Seriously, this book never disappoints. My father in law considers himself a lasagna connoisseur and he said this was definitely up there with the best lasagna he’s had. Everyone was shocked that this was a “light recipe.” It was so cheesy and hearty!

On the side, I also served everyone with some escarole with pine nuts (another Ellie Krieger’s recipe). This was great as well. Really flavorful and complemented the creamy lasagna perfectly.

Restless

I’ve been restless all day today, in a good way. I’ve been just super happy and chipper and couldn’t sit still. I just kept day dreaming about our new kitchen, thinking about how well I’ve been doing in general with my diet and exercise this week, how awesome my blog readers are and how I can’t wait for Friday night! ;) It also helped that I had 3 things to look forward to – 1) a fun lunch date with Mary Kate; 2) a great boot camp class after work; and 3) a yummy home cooked dinner. Could you contain yourself with all this excitement? :lol:

BREAKFAST

A “green” monster + a power bran muffin

In the monster – 1/2 frozen banana, frozen blueberries, 1/2 cup skim milk, large handful of baby spinach + Amazing Grass Green Food packet… it kind of came out black but still delicious :) I loved getting so many servings of fruits and veggies by 8 am!

LUNCH

Lunch was the aforementioned date with Mary Kate at Tossed. I got a giant salad with mixed greens, grape tomatoes, cucumbers, mandarin oranges, snow peas and cajun shrimp + dijon mustard dressing on the side (I used about a tablespoon).

When I got back to my desk, despite feeling uncomfortably full, I wanted chocolate in a bad way. A little calcium did the trick. Taking vitamins is so hard. lol :lol:

MID-AFTERNOON SNACK

The craving for a baked good hit later in the day. This chocolate brownie zbar really satisfied me today. I used to eat these all the time and forgot how good they are. I think I need to stock up  – these are great and are only 120 calories!

DINNER

Dinner was unphotogenic but very delicious. I made Ellie Krieger’s nutty sweet potato soup, hosted by Popsicles and Sandy Feet this week on CEiMB. I think a dollop of greek yogurt on top would have made it a little prettier but we are all out. I tried crumbling some goat cheese on top but it just sank. :???: In any case, the soup was hearty, flavorful and just the right amount of spicy (I used 1/2 amount of cayenne). The only little problem I had with it was the texture – my peanut butter didn’t melt that well. Once in a while there were pb chunks on the spoon. Not the worst problem but I was hoping for a super creamy consistency. Probably my fault.  On the side I enjoyed 1/2 FFL english muffin with some four pepper goat cheese. A perfect meal on a cold winter night! :mrgreen:

NIGHT-TIME SNACK

Once again I haven’t had enough calories during the day. I was craving white chocolate and I was cold. I grabbed a piece of chocolate and went to the cupboard for tea… and then I saw hot chocolate packets! Brilliant :cool:

These are fancy shmancy French hot chocolate packets we got at a gourmet cheese store last year. I used 1/2 cup of 1% milk, 1/2 cup hot water and the whole hot cocoa packet to make my hot chocolate. This was so rich and satisfying that I ended up only eating 1 little square of the white chocolate. Yay for listening to my body and being reasonable around yummy foods!!

I’m going to dinner at Oleana in Cambridge tomorrow night with the hubs. Calories will not be counted at dinner but every bite will be enjoyed. This is how I keep myself sane! :mrgreen:

Temptations at work, temptations at home

I made half a batch topped with crushed candy canes and half with walnut pieces. The walnut pieces side is so me with my nut and chocolate addition. This is one buttery “cookie.” I think our guests will enjoy them.

I also made Ellie Krieger’s lemon icebox bars from her new cookbook So Easy, which my husband got me for Christmas (recipe can also be found here). They are this week’s CEiMB recipe hosted by Playing House. Unfortunately my bars did not set! They are delicious lemon cheesecake mush. I’m going to need to find a creative way to serve them tomorrow. No bueno as of right now :(

Aside from sweet temptations, today went pretty well. It did feel different, counting calories and not grabbing a snack “just because.” I guess that means it’s “working.” I’m not going to celebrate just yet. It’s been 1 day, and I won’t be counting on New Year’s eve. I am excited about continuing this into 2010. Those holiday pounds will be gone in no time, and my self-esteem should come back with those lost pounds. *Fingers crossed!* Here is what the rest of my eats looked like…

During lunch hour today, I took a 40 minute boot camp class called SHRED, then jumped on the elliptical for 17 minutes. The entire time I felt pretty out of shape. Those extra pounds are really affecting my performance. I’m excited to change that! :D

DINNER

Dinner was kept on the lighter side because I knew I wanted to taste each of the sweet treats. It was a mish-mosh of things, all combined into a giant salad. The goat cheese tied them all together.

Chicken, mushrooms, olives and diced tomatoes (all from leftover chicken cacciatore), roasted brussels sprouts (from last night’s dinner) over mixed greens, topped with goat cheese and dressed with lemon juice

So that’s today for ya. Thank you all for you support on my previous post. It means a lot to me that my readers really care about me. Hopefully a thinner Elina is a lot happier and thus more inspirational. One more day left in 2009. Can you believe that?!!

Changing my tune

Merry Christmas for those who celebrate it!! I went to a spinning class yesterday and the instructor was blasting Christmas music (which btw is surprisingly motivating because it’s so dramatic and happy) and he said: “At the end of the class, if you don’t celebrate Christmas, please don’t complain to the front desk about me singing Merry Christmas for half a class. It’s a federal holiday (in the US), so… Merry Federal Holiday!” :lol: Haha, the guy is hilarious. Speaking of working out, before the spin class I did abs for 10 minutes and then ran a little over 2 miles on the treadmill after the class. I wanted to sweat, and sweat I did :)

Other accomplishments for the day included walking past all the candy and chocolates in the office and pretending it’s the most disgusting thing in the world. It was not easy, but I hated the defeatist tone of my previous post (it was how I truly felt though) so I decided that I was in control of me and changed it around (at least for one day. Hey, every little bit counts! :D )

Now let’s see what I did eat during the day…

SNACKS

Both snacks today were unpictured. Mid-day I had a persimmon (found them at TJ’s!) and in the afternoon a mini pack of sea-salt somersaults. Both were delicious and enjoyed while working.

DINNER

I was planning on making Ellie Krieger’s crab cakes for dinner last night since Thursday is Christmas Eve and I’ll be enjoying lots of other yummies. Unfortunately Adam was unable to get crab meat (the Whole Foods he went to was closed!) and I was stuck with improvising a decent dinner at a moment’s notice with whatever we had at home. In the spirit of CEiMB, I chose another Ellie recipe to base dinner on – chicken cacciatore (recipe can be found here).

We had no peppers, I omitted the onions, and added olives. The olives were the best part! I thought this dish was not bad but not good either. It had a lot going on, yet was not exciting. I am not looking forward to leftovers :( Served with some leftover quinoa and wheat berries…

DRINKS

After dinner, Adam and I rushed to meet our friends at the Road House in Brookline. I decided I wanted a fancier beer to start and Adam recommended that I get the Pretty Things Jack D’Or saison.

I think saisons are generally creamier (almost like a wheat beer but with a stronger flavor). This was a nice beer, but nothing special. It does seem to get good reviews from real critics, so maybe I just don’t know what I’m talking about. I’m no beer expert ;)

Nachos were ordered for the table. I didn’t have any but had to snap a photo because of how giant this thing was. It had pretty much everything but the kitchen sink!

I stole a rib from a friend. Yum – the sauce was almost fruity. Delicious!!

And then the dessert craving hit hard. I haven’t had any chocolate up until that point and was starting the get the shakes. Haha. Yes, I’m an addict. The carribean cocoa – malibu coconut rum, Chambrod, Baileys and cocoa topped with Kahlua whipped cream, sounded like the perfect dessert and drink in one.

And it was! Mmm, chocolate + raspberry + alcohol. Yes, yes, yes! That’s the kind of indulging I’m into :grin:

What a fun night with friends! Merry Christmas and Happy Holidays, everybody! I’m off to work for a few hours, then hit the gym and head over to my in-laws. My next post should be a recap of Christmas festivities. I’m dying to know what Adam got me! :mrgreen:
