Vacation plans

I stayed up way past my bed time last night, trying to make some vacation plans. I thought this post on my recent beer adventures would keep you entertained, but apparently you’re not beer fans?? :???: Anyways, back to vacation plans… the last vacation Adam and I took was in October, and the one before that was a year ago. We are definitely overdue for one! We started with planning a trip to San Francisco, realized our miles cannot be used for a trip this soon, and switched gears (we’ll go to San Fran in the summer instead). How nice would it be to just relax on the beach with nothing else to do? I don’t remember the last time we did this. Maybe never. The sound of a Caribbean vacation seemed more and more appealing as we did more research… except it’s expensive! At the end, more research needs to be done so we can find a good deal, but I cannot wait. A Caribbean vacation may also just be the kick in the butt that I need to get back on the healthy eating wagon. The new kitchen is helping with that as well. ;) I’ll keep you guys posted.

LUNCH

Lunch was SO good! I go home for lunch on Mondays… love that! I just threw a bunch of frozen and fresh veggies + cooked wild rice + shrimp in the wok and voila – delicious lunch!

Stir fry with cauliflower, broccoli, red pepper, carrots, wild rice, shrimp with Jenna’s sesame sauce + sesame seeds

MID-AFTERNOON SNACK

I am once again obsessed with KIND bars. I need to stock up. These bars are a little too sweet but the whole nuts are the best. This bar had whole almonds and macademia nuts. I’m nuts for nuts! :lol:

WORKOUT

I went back to one of my favorite classes at the gym after work – Rack it Up. It’s basically Body Pump/Group Power with a different name, and I LOVE this class. It’s been forever since I’ve been but I was able to lift the same weight as before (surprised myself actually!). The only thing was my legs. I used to lift 53lbs (includes 3lbs for the weight of the bar), but yesterday 33lbs almost instantly gave me leg cramps. I went down to 28 for the lunges track and still my legs were shacking. I hope I can run today! Anyways, I felt super strong and find these types of classes very inspiring. The guy next to me said he loves when I come because I can lift more than any of the guys (that included him, btw). Haha, love that! :lol:

Earning my salary

I feel so accomplished right now. I had the most productive call with our credit committee in Japan today and got through to them on several points my colleagues tried to explain for hours over the past few days. I feel like such a good employee, hehe! That’s why the pay me the big bucks, right? ;)

WORKOUT

I attended a pilates class during my lunch hour today. I planned on also doing a 3 mile run before or after class but I was “done” after pilates. I thought I’d be able to come back to the gym after work so I can cross both workouts off the list, but my husband surprised me with an earlier arrival from his business trip… so instead I went on a little date. :D

LUNCH

I bought all sorts of fun convenience foods at Trader Joe’s yesterday – mostly cut up veggies and lots of fresh produce but these fresh spring rolls with shrimp caught my eye and I thought they’d make a perfect lunch one of these days. I was right! Super fresh and fun!!

The rice wrapper was stuffed with vermicelli noodles, steamed shrimp, cilantro and carrots. The dipping sauce was sweet with a bit of spice. I really enjoyed this after my pilates class. I felt like I was at a spa. :grin:

A bit of sugar was consumed in the afternoon… good thing I stock my drawers at work with lots of healthier sweets.

Spooky dreams

A nightmare last night woke me up in the middle of the night. I dreamed that all of my teeth fell out… it started with easily being able to pull out a tooth, then another, then all of them starting to crumble in my mouth. I couldn’t breathe because they were all coming down at once with their giant roots getting in the way of each other. I was also at school for some reason, so I tried to find a dentist but she wasn’t around… and the guy that greeted me in the classroom couldn’t care less about my problem. Man, that was one unpleasant dream! :???:

The first thing I did this morning (after making some coffee) was to google what that meant. Eek, maybe not the best idea! People out there have some whacky interpretations, although I did find that it’s a very common dream. Have you had it before? Not fun, not fun at all. Some interpretations did say that it means you may be worried about expressing something and that your voice may not be heard. Before going to bed last night, I was prepping for a presentation in front of our credit committee. Maybe I was worried about that? I plan on kicking ass during committee today – no need to lose any teeth over it. ;)

Now let’s rewind back to yesterday’s eats. It was one lazy day!

I cooked the shrimp on the George Forman grill… quite the set-up!

The salad was awesome. If I can make a healthy meal like that without a kitchen, anyone can!

Restless

I’ve been restless all day today, in a good way. I’ve been just super happy and chipper and couldn’t sit still. I just kept day dreaming about our new kitchen, thinking about how well I’ve been doing in general with my diet and exercise this week, how awesome my blog readers are and how I can’t wait for Friday night! ;) It also helped that I had 3 things to look forward to – 1) a fun lunch date with Mary Kate; 2) a great boot camp class after work; and 3) a yummy home cooked dinner. Could you contain yourself with all this excitement? :lol:

BREAKFAST

A “green” monster + a power bran muffin

In the monster – 1/2 frozen banana, frozen blueberries, 1/2 cup skim milk, large handful of baby spinach + Amazing Grass Green Food packet… it kind of came out black but still delicious :) I loved getting so many servings of fruits and veggies by 8 am!

The bran muffin was toasted from frozen and was still yummy although a little dry.

Lunch was the aforementioned date with Mary Kate at Tossed. I got a giant salad with mixed greens, grape tomatoes, cucumbers, mandarin oranges, snow peas and cajun shrimp + dijon mustard dressing on the side (I used about a tablespoon).

When I got back to my desk, despite feeling uncomfortably full, I wanted chocolate in a bad way. A little calcium did the trick. Taking vitamins is so hard. lol :lol:

The craving for a baked good hit later in the day. This chocolate brownie zbar really satisfied me today. I used to eat these all the time and forgot how good they are. I think I need to stock up  – these are great and are only 120 calories!

DINNER

Dinner was unphotogenic but very delicious. I made Ellie Krieger’s nutty sweet potato soup, hosted by Popsicles and Sandy Feet this week on CEiMB. I think a dollop of greek yogurt on top would have made it a little prettier but we are all out. I tried crumbling some goat cheese on top but it just sank. :???: In any case, the soup was hearty, flavorful and just the right amount of spicy (I used 1/2 amount of cayenne). The only little problem I had with it was the texture – my peanut butter didn’t melt that well. Once in a while there were pb chunks on the spoon. Not the worst problem but I was hoping for a super creamy consistency. Probably my fault.  On the side I enjoyed 1/2 FFL english muffin with some four pepper goat cheese. A perfect meal on a cold winter night! :mrgreen:

NIGHT-TIME SNACK

Once again I haven’t had enough calories during the day. I was craving white chocolate and I was cold. I grabbed a piece of chocolate and went to the cupboard for tea… and then I saw hot chocolate packets! Brilliant :cool:

These are fancy shmancy French hot chocolate packets we got at a gourmet cheese store last year. I used 1/2 cup of 1% milk, 1/2 cup hot water and the whole hot cocoa packet to make my hot chocolate. This was so rich and satisfying that I ended up only eating 1 little square of the white chocolate. Yay for listening to my body and being reasonable around yummy foods!!

I’m going to dinner at Oleana in Cambridge tomorrow night with the hubs. Calories will not be counted at dinner but every bite will be enjoyed. This is how I keep myself sane! :mrgreen:

Re-inspired

My Texan vacation was such a great time. I feel like for the first time in months I’ve actually spent quality time with my husband and truly relaxed while enjoying beautiful weather and exploring 2 cities I’ve never been to before. Like I mentioned in a previous post, I think it was exactly what the doctor prescribed – in more ways than one. Aside from the above, this vacation also made me appreciate Boston, my home, and healthy eating. I am re-inspired to get healthier, stop the mindless eating behavior that recently has crept up and unsurprisingly caused some weight gain. I missed cooking! I missed baking (something I haven’t done in ages, actually) and of course exercising. I’m back with more energy and excitement about all of these, and I hope that my re-ignited fire translates into more fun posts ;)

On a somewhat related note – did anyone see the Biggest Loser this week? What an intense episode!! I actually couldn’t fall asleep last night after we got back from San Antonio so I decided to catch up on my BL. Well THREE hours later, I was in tears, yet so happy to see the eliminated player’s progress (I don’t want to spoil the surprise for those who missed it). Did you notice that they didn’t show *her* “after” footage? I went online and found the video, as well as the additional interview. One of the questions actually related to staying away from unhealthy treats. She said that before she puts anything into her mouth, she evaluates whether it will bring her closer or further from her goal, and always chooses the one that gets her closer to it. I think that since most of us don’t have a lot of (or any) weight to lose, and are not on a competitive tv show, we get a little more room for “error,” but I do think that it’s important to stop and think sometimes – and make the “right” choice most of the time. I’ve let go recently, and this reminder will hopefully help me get back on track! I’ll definitely keep you guys posted on my progress :mrgreen: Now enough talking, let’s get to today’s eat!

The cereal was a sample I got in the mail, and I really enjoyed it. Lots of crunch and delicious sweet (but not too sweet) blueberry clusters. :)

I ate this in 2 parts (double the soup) since work got crazy busy, and it satisfied my hunger for hours! I am definitely going to be shopping for more V8 soup in my future! It was the perfect “I have nothing in the house but I want a healthy meal” meal :D

Given that today is Thursday, I wanted to make another Ellie Krieger recipe. Since I was on vacation for a week, I decided to make last week’s chosen recipe - linguini with shrimp (I had all the ingredients for it at home and this week’s recipe in all honesty scared me a bit :lol: ). I cut down on oil, used 2oz of pasta/serving (instead of 6) but otherwise followed the recipe with no substitutions.

It came out quite delicious. After nearly a week of Mexican food, a big bowl of healthy pasta really hit the spot! :D

Is it me, or is something missing from today’s eats? Oh yeah – dessert!! I have some healthified brownies with cherries in the oven that I can’t wait to sink my teeth into. Healthy “indulgent tasting” treats are what keeps me in check. I am proud of today’s food choices. Are you proud of yours today?
