Zombie on the loose

March 6th, 2009 · 10 Comments · 20 minute meals, Cooking Light, chicken, dessert, salad, scallops, snacks, yogurt

I’ve been such a zombie all day!  Well, I guess I was doing okay for the first part of the day (still afternoon/evening time in Asia) but mid afternoon (post my workout) I totally crashed.  It was as if I was pulling an all-nighter at work, since it was night time in Asia.  I finally dragged myself out of work at 5:40 and could not wait to get home!

FOOD

The day’s eats were kind of uneventful.  I did eat very healthy so I’m very VERY happy about that.  No best meal of the day… they were all kind of just average.  Delicious but not amazing.

I woke up at 5-something and grabbed some grapes…

Actual breakfast when I got to work …  Yum!

plain chobani + 1/2 banana, TJ's nutty trek mix + kashi golean cereal

Pre-workout snack: carrots with hummus + 1/2 of the bar below (finished it with lunch).

Sabra roasted garlic hummus + carrot sticks

I finally found the new Kashi bars!  If I remember correctly, I think I jumped up and down when I saw them … I got all 3 kinds.  Seriously, this was the highlight of my grocery shopping :)   What did I think of this bar?  I thought the granola part was dry and bland tasting but the fudge part was kick-ass!   I have a whole box of them, so we’ll see if I get addicted by the time I’m out…

Lunch + afternoon snack… self explanatory, right?  I dressed the salad in 1 tablespoon of Annie’s woodstock dressing.  This stuff is pretty good.  My dressing love is still Annie’s goddess dressing (the original).

Dinner was a little dissapointing.  I tried making the seared scallops with warm tuscan beans from the latest issue of Cooking Light.  It was in their 20-minute meals section and those have not dissapointed to date.  Well, this one was kind of bland.  I added a good amount of lemon juice to the final product after tasting it, and it helped a lot.  The garlic toast was also a nice way to soak up all the broth and juices.  This wasn’t bad… I just wasn’t in love and I won’t make it again.  I want to be wowed by my food.

And for dessert I made some cappuccino no-pudge brownies.  I wanted something warm and familiar.  Love these! :)

WORKOUT

Despite my lack of sleep, I was very much excited about working out.  I took an abs + express power conditioning classses, then jump roped for 3 minutes and did another 22 minutes on the elliptical.  The gym was about 90 degrees so I felt like I was back in Singapore    Workout stats…

  • Duration: 1:15
  • Calories burnt: 596 (45% fat)
  • Ave HR: 143; Max HR: 221

So can you tell my HRM is being totally weird?  I doubt my heart rate actually got to 221.  I know it was like a sauna in there, but still… Anyone had the same problem and knows how to fix it?

K, I’m signing off.  Don’t forget to check out my recap of our first day in Singapore.

Chopsticks are cool

February 12th, 2009 · 13 Comments · breakfast, scallops, snacks, tofu

Oh man, I’m totally exhausted for some reason.  Today was another good day, though :)  Getting all of your comments on my last post made me so happy because it just reminded me throughout the day of how great yesterday was.  Today was good too, except for the weather.  Man it got cold again!  I walked home and almost froze to death.  Ok, I may be slightly exaggerating

Sorry, I’m making this quick.  It’s been a really long day and I’m about to pass out.  The food was good though and so was my workout.  Love it!

BEST MEAL OF THE DAY:

Leftovers from yesterday were absolutely amazing, and I’m really tempted to call them the best meal of the day.  The sauce is good stuff!  I think it even looks prettier today :)  I ate my lunch with chopstick to really feel like I’m eating asian food… and it’s also kind of fun to eat with chopsticks :D

spicy noodles with tofu and mixed veggies

Ok ok, but because you’ve already seen this, I’ll also add a super delicious breakfast to my best meal of the day.  Honestly I couldn’t chose between the 2 meals.  I started eating breakfast at home because this way I get to eat exactly what I crave that very moment instead of what I pre-pack the night before, and I’m really loving it!  So far the breakfasts also held me over just as long.  Not sure if this will become my new thing, but it’s been definitely fun the last few days :)  Anyways, breakfast was a Food for Life english muffin with Barney Butter and cherry preserve + a medium banana and a large coffee.  So delicious!

OTHER EATS

1/2 cup 2% cottage cheese, fresh strawberries and grapes

mini lemon square

lemon/butter scallops, ww couscous + asparagus

Sorry dinner is so ugly.  I needed to make something super quick and despite being totally unphotogenic, this actually came out pretty delicious.

Peach chobani

I was really trying to have the chobs as my dessert, but who was I kidding… I need chocolate for that :)  So I had 1/2 serving of my favorite trail mix ever! :D

1/2 serving TJ's nutty american trek mix

Total calories for the day: ~ 1750 (I had to guesstimate for the office treat so I’m not 100% sure)

WORKOUT

I started with an abs class (which I was late to so I only did about 8 minutes), then took a 40 minute spin class, followed by 5 minutes of stretching and 20 minutes on the elliptical.  I really wanted to do another 15 minutes of the stationary bike but my ipod battery died so I took it as a sign that I’ve had enough and left.  It was still a great workout!  Workout stats:

  • Duration: 1:09 (+ 5 minutes of stretching)
  • Calories burnt: 587 (15% fat)
  • Ave HR: 146; Max HR: 172

MISC

I’ve been super busy at work and decided to ban blog reading during office hours.  It just got bad, sneaking in peaks here and there.  So I am reading when I get home, just not commenting as much.  Sorry if you haven’t heard from me… I promise I’m reading :)

All right, I’m off.  Seriously my eye lids feel so heavy right now…
