			<content:encoded><![CDATA[<p>I know I&#8217;ve been mentioning here and there that work has been busy lately. Well, basically July is going to be hell for me. I have more projects/reports than days left in the month and I&#8217;m hoping that somehow it all just clicks and I&#8217;m able to accomplish everything by the deadline. I will, however, have to put in extra hours. A lot of extra hours. Late nights at work means less time for cooking and exercising. The only problem is that I don&#8217;t feel well when these two things are not a part of my life and that actually impacts my performance in other areas&#8230; including work.</p>
<p>Obviously I&#8217;m going to eat (hopefully some super quick meals that are more &#8220;assembly&#8221; rather than &#8220;cooking&#8221; will still be satisfying) but exercise is the easiest thing to push off the schedule when life gets in the way. <strong>So how do you find time to exercise when it seems like there is no time to spare?</strong> My answer for now is going to be &#8220;<strong>You have to</strong> <strong>make it a major priority</strong>&#8220;. My deadlines are not for a few weeks but it&#8217;s a lot of work and I have to have the discipline to work with this in mind. The last few days may get tough, but until then I&#8217;m willing to do whatever it takes &#8211; that may mean waking up early on some days, or working until very late because I want to go to the gym during lunch. I also will try to increase the intensity of my workouts so that less time at the gym still provides me with a quick burn that I crave. Finally, that also means that some other things will have to suffer. I am sure my DVR will miss me dearly (or maybe not, I know I&#8217;ll miss it) and as previously mentioned, elaborately cooked meals will be out of the window for the next few weeks. Some healthy take-out once in a while will also give me a little extra time. Lastly weekend work will surely be required. It&#8217;s easy to get so stressed out about work that you don&#8217;t allow any time for other activities and burn out quickly, but I&#8217;m going to attempt to still take care of my body in the meantime. <em><strong>Do you have any other tips?</strong></em></p>

<p><strong>&#8220;Free form lasagna&#8221; </strong>- <em><strong>black pepper pasta sheets, chicken, mushrooms, spinach, plum tomato ricotta sauce</strong></em> (I had mine without the chicken)</p>

<p>Panza was a really great restaurant (casual, yet inviting, great service, delicious unpretentious food) and this dish was fantastic. I loved the fun shapes of the pasta and the chunky tomato ricotta sauce. If I go back there and order this dish again (very likely!), I&#8217;m going to ask for extra mushrooms.</p>

<p>After all this talk about finding time for exercise, I did in fact find some time for a <strong>bootcamp</strong> class tonight. I&#8217;ve gained weight recently and its impacting my performance at the gym but it&#8217;s not going to stop me from keep trying. In fact, I&#8217;m using it as a challenge to get back into it and get even better than I was before! <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':grin:' class='wp-smiley' /> </p>

<p>Quick side note: the <strong>pesto potato salad</strong> I made for the pool party on Saturday. It&#8217;s this week&#8217;s CEiMB recipe hosted by <a href="http://thenotsoskinnykitchen.wordpress.com/">The Not So Skinny Kitchen</a> (recipe <a href="http://www.foodnetwork.com/recipes/ellie-krieger/pesto-potato-salad-recipe/index.html">here</a>). I am not a fan of the mayo-based potato salads but this one was quite delicious. <p>So yeah, I threw some of the leftover potatoes/peppers into the pan for some extra heft and carbs. I also pre-roasted the beets end of last week (sliced, at 350* for about 20 minutes). Tonight, I sauteed some beet greens in a sprayed skillet, then added 1/2 can of diced tomatoes, roasted beets and potato salad, cracked 2 eggs and finally threw a few pecans in. That was on the stove for a few minutes, then under the broiler for a few more. Done!</p>

I will say I&#8217;d love something sweet right about now but it&#8217;s getting late and I can probably do without. <p>So I wanted to talk today about something that I recently noticed about myself&#8230; I <b>am a true Internet addict</b>. Yes, many of us spend quite a bit of our time online (especially bloggers!) but for me the problem is that&#8230; <b>once I pop, I can&#8217;t stop</b>! <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  Okay, maybe that exact expression is more fitting for chips, but seriously&#8230; if I allow myself &#8220;just 1 minute&#8221; to check the email, several hours pass by and its way past my bedtime. I check an email &#8211; that leads to a website, or twitter&#8230; and you know where that gets you. Twitter is not exactly productive. <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_lol.gif' alt=':lol:' class='wp-smiley' />  I&#8217;ve been trying to set a strict &#8220;bed time&#8221; but it&#8217;s not working. <b><i>Anyone else is an Internet addict?</i></b> I know at least a few of you are. Any tips of how to take it a little easier, or at least help with the whole &#8220;get in bed at a reasonable hour so you don&#8217;t look and feel like a zombie in the morning&#8221;? <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':grin:' class='wp-smiley' /> </p>

<p>So Wednesday was my first workout in a week. Yikes! <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_redface.gif' alt=':oops:' class='wp-smiley' />  I took a super hard spin class and vowed to never take such a long break from working out again. It was due to a combination of going away for the weekend and work being super busy. Yesterday, I went back for more &#8211; this time for an <b>abs + RIPPED class</b>. Basically a crazy awesome bootcamp that I totally thought I couldn&#8217;t handle but somehow came out alive out of. The instructor was making fun of me a bit because I kept screwing up. She knows I haven&#8217;t been there in a few weeks and we both saw the pretty obvious consequences of such actions. She&#8217;s out on vacation next week, but I am going to ace these bootcamp classes again. I used to be one of the best in the class. I want to feel super strong again!!</p>

<p>This is definitely one of my favorites at our local farmers markets. I love that the girl that runs it is very knowledgeable about their farming practices and chicken raising (they sell their own eggs &#8211; from range free chickens that have their beaks for only $3.50/dozen &#8211; that&#8217;s cheaper than organic eggs at a super market!!).</p>

<p>I also love that their gorgeous produce is significantly cheaper than anywhere else. I think they actually watch their competition and try to undercut it a bit. Hey works for me. It&#8217;s still not cheap (i.e. I know they are well paid) but it&#8217;s more affordable compared to others for sure.</p>

<p>How could I forget? <a href="http://cravingellieinmybelly.blogspot.com/">CEiMB</a> meals are back! This week&#8217;s dish was p<b>enne with roasted tomatoes, garlic and white beans</b> (recipe <a href="http://www.foodnetwork.com/recipes/ellie-krieger/penne-with-roasted-tomatoes-garlic-and-white-beans-recipe/index.html">here</a>). I got the tomatoes and basil at the farmers market for it so I felt it still utilized some local produce. I like really centering my meals around that.</p>

<p>This took quite a bit of time to make (not active time, just waiting for the tomatoes and garlic to roast) and I&#8217;m not sure that it was worth it. Maybe I overcrowded my tomatoes (I nearly double the amount based on reviews online) but they kind of came out stewed rather than roasted. This was a little on the bland side (again, maybe I should have doubled the garlic and oil too to compensate for the extra tomatoes?). We enjoyed it but I won&#8217;t be making it again.</p>

<p>I used 1 egg and 1 egg white for this guy. As you can see, it completely fell apart but man, was it delicious. Salty from the feta, fresh from the pop of the tomatoes. Yum! <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>With the omelet I also had a little piece of <strong>toast</strong>, and grabbed this <strong>orange</strong> to go.</p>

<p>We had pizza at work during a meeting. I picked what I thought was a<strong> mushroom/artichoke pizza</strong> &#8211; that one looked wonderful&#8230; until I discovered a ton of pepperoni under the veggies. No picture but let&#8217;s just say I was picking at my food like a 5 year old. I had a whole mountain of peperoni on my plate and a million napkins all around me when I was done. So professional. <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_lol.gif' alt=':lol:' class='wp-smiley' />  I had 2 slices and stayed away from the super market cookies. I had something way better for me waiting in the fridge&#8230;</p>
<p><span style="color: #008000;"><strong>TREAT</strong></span></p>
<p>Some of you were close with your guesses<a href="http://healthyandsane.com/2010/06/substituting-ingredients-book-review-giveaway/"> in my last post</a>. I made <strong>cookies &#8216;n cream cheesecake bars</strong> following <a href="http://www.healthyfoodforliving.com/?p=9454">this recipe</a> from Food for Living. I literally saw it yesterday morning and then stopped by the grocery store on the way home to pick up the ingredients and baked them that night. I like having healthier baked goods around so that I&#8217;m less tempted to stop by a bakery and buy something 10 times worse for me and way more expensive.</p>

<p>I resisted the urge to have a whole photo shoot of these guys. Lauren already did a wonderful job. <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  The cheesecake bar tasted so delicious. The crust was thin and moist, the cheesecake was creamy with a touch of sweetness. I like that these are not overwhelmingly sweet. You can really taste the quality of the ingredients. I love making cheesecake bars &#8211; this recipe is a keeper!</p>
<p><span style="color: #008000;"><strong>WORKOUT</strong></span></p>
<p>After work I headed to the track for a workout with <a href="http://bostonperformancecoaching.com/indoor-outdoor-running-workouts.html">Boston Performance Coaching</a>. You may remember <a href="http://healthyandsane.com/2010/04/what-doesnt-kill-you-makes-you-stronger/">I&#8217;ve done it once before </a>and was terribly hard on myself. It was a tough workout, one I wasn&#8217;t particularly excited to go back to (since I&#8217;m not even training for a race) but I wanted coach Ali to look at my running form again so I signed up. The Harvard Track was actually being used for some kind of a race so we went to this dinky little side track and did laps there. That made them much shorter and a lot more manageable. Still hard but doable. This time Christina (I think?) was coaching and she said my problem is my arms. I cross them while I run which is inefficient and hurts my back. I tried to relax my shoulders down this time. Something I must work on. She was right. I felt very accomplished after we finished and actually ended up walking back home too, which was a little over 3 miles. It was nice out and Adam was out so I took advantage. <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

I had some more <strong>spicy black bean dip with lime tortilla chips</strong> while prepping and after dinner. I think these need to be banned from our house. For some reason I lost that &#8220;oomph,&#8221; that desire to be intoxicated by healthy living and balance and SANITY. I feel like I&#8217;m in a rut and I can&#8217;t get out of it. I keep telling myself to &#8220;just do it&#8221; and then don&#8217;t. It&#8217;s a problem. I keep going back and forth about doing a self-intervention and laying down some rules (which I kind of have in my head anyways and have been diligently <em>ignoring</em>) and just completely letting go in hopes that just easing up will take care of the issue. I actually feel pretty good about how I ate during the weekend, when I didn&#8217;t care about caloric intake, exercising and the like. And then I starting royally blowing it right after that. <em><strong>Any advice?</strong></em></p>
<p>I did &#8220;force&#8221; myself to take pictures of my breakfast and dinner today. <p>After writing <a href="http://healthyandsane.com/2010/06/two-day-highlights-a-giveaway-alert/">my previous post</a>, I actually did end up making a <strong>virgin bloody mary</strong> to-go. It was gone too soon. I was dreaming of having another one all day. And I did when I got home. Yes, I&#8217;m addicted. <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':grin:' class='wp-smiley' /> </p>
<p>Snacks throughout the day included <strong>an orange, a banana bread clif bar, some cookies, cheese, bread with baba ganoush</strong> and I feel like there was something else but I really can&#8217;t remember.</p>

<p>This dinner had so many components, I was pretty proud of pulling it together in roughly 40 minutes. It was pretty yummy but nothing extraordinary. I actually think the leftovers will taste better (I doubled the recipe) since the sauce will have time to absorb into the fish, noodles and veggies. The noodles were definitely my favorite part. The mahi-mahi is also a great meaty fish.</p>

We did have a pretty delicious brunch at <strong><a href="http://www.pigandegg.com/">Egg</a></strong> before leaving, but I&#8217;m going to go out and say that it was not worth the hour+ wait. <p>So we are back to semi-regular food journal blogging. After a weekend away, I jumped back on the cooking wagon right away. That&#8217;s the best way to ensure that I&#8217;m eating nutritious foods. Here are the highlights:</p>
<p>I dug deep into my freezer and found an old box of <a href="http://www.holeydonuts.net/"><strong>Holy Donuts</strong></a>, which made an appearance in Monday morning breakfast.</p>

<p>I don&#8217;t know what kind this was. It was a bit stale but still filled me up.</p>

<p>I added something new to my <strong>green smoothie</strong> &#8211; <strong>sprouts</strong>. They made the smoothie taste a bit &#8220;healthier&#8221; but the almond milk + banana + peanuts still added a good amount of sweetness. Not bad. Not bad. <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>Lunch was a<strong> grilled veggie + <a href="http://samirashomemade.com/products.html">Samira&#8217;s Homemade</a> jalapeno hummus + <a href="http://lawtonsfamilyfarm.com/index3.html">Foxboro Cheese</a> fromage blanc wrap</strong>. Yummy. No picture.</p>
<p>Dinner was AMAZING! Adam mentioned he was craving Chinese food over the weekend. Before I even had a chance to say: &#8220;I&#8217;ll make some&#8221; he added: I want it to be authentic <em>and greasy</em>. No can do on the greasy part. Sorry. I still made a Chinese dish for our Meatless Monday dinner and it <em>was</em> authentic tasting.</p>

<p>I picked this <a href="http://www.mcclurespickles.com/"><strong>McClure&#8217;s</strong></a> bloody mary mix up in Brooklyn before we left and I&#8217;m so happy I did. This mix is spicy and super pickly (not a word, but you get it, right?) &#8211; just how I like &#8216;em! I actually had another glass after dinner. This time I used about 1/2 mix and 1/2 water and it was a little less &#8220;I&#8217;m drinking tomatoey pickle water&#8221;&#8230; even though honestly I totally could. Yes, I am obsessed with everything-pickle. <p>I picked up some grass fed beef at the farmers market the other day and decided to make Lauren&#8217;s <strong>beef, potato and root vegetable stew</strong> for dinner last night (recipe can be found <a href="http://www.healthyfoodforliving.com/?p=5980">here</a>).</p>

<p>Yes, I know it&#8217;s basically summer but I don&#8217;t care. This was made in my crockpot (I just threw everything in after browning the meat) and was delicious. I did add a whole bunch of hot sauce, extra salt and pepper and garlic powder to flavor the broth a bit more. After about 6 hours in the crockpot, the meat was tender and the broth thickened up around the veggies.</p>

But, I&#8217;m going to go out and say it &#8211; <strong>you haven&#8217;t had REAL ice cream until you&#8217;ve made your own!</strong> Homemade ice cream takes ice cream to a whole new level. It&#8217;s actually hard for me to think straight right now &#8211; that&#8217;s how good my little ice cream making project went today. All right (<em>collects herself</em>), let&#8217;s back up a bit&#8230;</p>
<p>We got an <strong>ice cream machine</strong> from my parents-in-law <a href="http://healthyandsane.com/2009/12/christmas-celebration-2009/">this past Christmas</a>. Around the same time we started our kitchen remodel, but that didn&#8217;t stop me from making <a href="http://healthyandsane.com/2010/01/makeshift-kitchen/">my own frozen yogurt</a>. It was a good first try. Pretty yummy but the recipe definitely required some tweaking. That was my first and last attempt at making a frozen concoction&#8230; until today!</p>
<p>I actually finally dug a whole in our freezer big enough to fit the ice cream bowl into a few days ago, but receiving <a href="http://www.amazon.com/O-Oprah-Magazine-Cookbook-Editors/dp/1401322603"><strong>The Oprah Magazine Cookbook</strong></a> from my parents-in-law for my birthday (thank you!) and locking eyes with the sour cream ice cream recipe sealed the deal for me. I had to go buy ice cream ingredients. Stat. [Recipe can also be found <a href="http://www.oprah.com/food/Sour-Cream-Ice-Cream-with-Caramelized-Pear-Compote">here</a>,   I used low fat sour cream and a little less than 1 cup of sugar.]</p>

<p>OMG &#8211; amazing. Incredibly smooth and slightly tangy. Maybe it&#8217;s the sour  cream that put it over the top for me, since you know, sour cream  probably runs through my veins (being a &#8220;Russian&#8221; and all), but Adam  thought it was pretty phenomenal as well. I am doing everything I can to keep myself away from the kitchen (read: freezer). This could be trouble!</p>
<p>If you don&#8217;t have an ice cream machine (although you should really start making space or saving for one &#8211; whatever reason has stopped you from buying it), no worries. I got a whole lot of other deliciousness to share with you. Let&#8217;s begin with&#8230;</p>

<p>The recipe made 4 larger muffins and 8 smaller ones. I also added about 1/4 cup of chopped walnuts to the batter. For those of you who count calories &#8211; the larger one is ~255 calories,  the smaller one is ~170 cals (just counted it so that I wouldn&#8217;t be going overboard on calories without even realizing it). I enjoyed one larger one with some <a href="http://healthyandsane.com/2010/05/happy-birthday-to-me/">local organic strawberries</a> and coffee.</p>

<p>Earlier this week I received from the company a sample of <strong><a href="http://www.liptonpureleaf.com/">Lipton Pure Leaf</a> ice tea</strong> for my review. I thought these would be perfect to accompany a summery-ish lunch.</p>

<p>The Pure Leaf ice tea is sweetened with stevia and has zero calories. I received 2 flavors: lemon and raspberry. Unfortunately I did not enjoy either one of these. They were extremely sweet and very &#8220;fake&#8221; tasting. Thumbs down from this blogger. Adam still polished them off but said he prefers diet <a href="http://www.snapple.com/">Snapple</a>. I&#8217;ll stick to water.</p>

<p>Dinner came together in minutes and was extremely flavorful. These tasted pretty authentic to me. No cheese or sour cream needed &#8211; just lots of fresh flavors (mmm, lime + avocado).</p>
<p>So much good eats! I wish everyday could be this healthy and delicious.</p>
<p><em><strong>Have you ever made your own ice cream? What&#8217;s your favorite kind?</strong></em> I think we&#8217;re going to do a chocolate/m&amp;m combo next (Adam&#8217;s childhood favorite) and then junk-free oreo cookie ice cream. <p>So remember <a href="http://healthyandsane.com/2010/05/dip-off-bake-off-i-need-your-help/">the bake-off</a> I mentioned a few posts ago? I emailed the organizer yesterday and she clarified the rules to me &#8211; this is a <strong>brownie contest</strong>! Dang, and I thought a had a <a href="http://healthyandsane.com/2010/05/weekend-blogging/">winning recipe</a> all planned out. Brownies happened to be one of my favorite desserts of all time, so I&#8217;m super excited for the tasting portion of the contest, but I&#8217;ve never actually baked a brownie I thought was outstanding. My last attempt at <a href="http://healthyandsane.com/2010/05/mix-bakery-cupcake-heaven-here-in-boston/">rocky road brownies</a> was a good try. I liked the topping (and think it may be a great contestant!) but the brownie was <em>really</em> dry. <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' />  I asked you for your favorite brownie recipe in that post (and <a href="http://www.beantownbaker.com/2009/08/peanut-butter-brownies.html">Jen </a>came to the rescue &#8211; I plan on testing it soon, Jen!) but I&#8217;m asking again. <em><strong>Do you have a favorite brownie recipe? </strong></em>It can be a basic brownie (I&#8217;ll add my own topping) or a great brownie &#8220;combo.&#8221; Thanks again!! <p><span style="color: #008000;"><strong>WORKOUT</strong></span></p>
<p><strong>Power yoga</strong> at my gym. The girl&#8217;s voice wasn&#8217;t as soothing as my favorite instructor&#8217;s on Thursdays but the practice was good at the end. Once we started flowing I forgot about all this other nonsense like how I wish the girl didn&#8217;t sound so &#8220;valley.&#8221;</p>

<p>I really tried being vegan for the day but couldn&#8217;t resist the urge to add the goat cheese to my lunchtime sandwich. For dinner the cheese jumped in once again but we couldn&#8217;t really taste it at the end, so it&#8217;s going to be 100% vegan next time. So what did we have, you ask?</p>
<p><strong>Avocado and <span style="text-decoration: line-through;">pinto </span>black bean enchiladas</strong> from <a href="http://www.amazon.com/dp/1551522241?tag=dreenaburtonc-20&amp;camp=14573&amp;creative=327641&amp;linkCode=as1&amp;creativeASIN=1551522241&amp;adid=0MKSZG9S6KBGS1E621DT&amp;">Eat, Drink &amp; be Vegan</a></p>

<p>I made a few tiny modifications to the recipe &#8211; if you can get a hold of it and want to recreate my version exactly, here they are. I used only 8 corn tortillas (to save cals &#8211; 2/prs is plenty), black beans instead of pinto (Adam is obsessed with black beans!), almond slices instead of cashews (all we had), no onions, 1 jar of TJ&#8217;s enchilada sauce, 1/4-1/2 cup of <a href="http://www.stonewallkitchen.com/prdsell.aspx?L0=SpecialtyFoods&amp;L1=Sauces&amp;L2=HotSauce07&amp;L3=PeachMangoHotSauce">Stonewall kitchen peach mango hot sauce</a> and a sprinkle of TJ&#8217;s light Mexican cheese. I think that&#8217;s it <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

<p>I served it with a Russian inspired salad &#8211; <strong>fresh tomatoes, cucumbers, S&amp;P + nonfat yogurt </strong>(Russians would traditionally use sour cream) &#8211; it was perfectly cool to balance out the spiciness of the enchiladas!</p>

<p>We are having our outdoor furniture delivered today. Our first farmers market is also opening today. <p>Then yesterday, I received my <strong>spring eco sample pack</strong> from <a href="http://www.theecoluxelifestore.com/product/Tell_Membership.html">Eco Luxe Life</a> and realized I never shared this site with you. I love the concept behind it. I purchased a yearly membership early in the year and now receive quarterly eco-friendly samples of cosmetics and household products. Since I&#8217;m constantly on the look-out for new environmentally friendly products, I find that it&#8217;s a great way to discover them. The company asks for feedback on all products in the packages and also sells them in full size if you want to stock up. <em><strong>Isn&#8217;t it a neat idea?</strong></em> Here is what I received this spring:</p>

<p>Yesterday was supposed to be my day of tackling my to-do list. I was getting crazy stressed out about everything and Adam made me realize that it&#8217;s time to trim down that list and work on not adding anything new to it. <p>For the waffles, I used <a href="http://www.101cookbooks.com/archives/multigrain-waffles-recipe.html?utm_source=feedburner&amp;utm_medium=feed&amp;utm_campaign=Feed%3A+101Cookbooks+%28101+Cookbooks%29&amp;utm_content=Google+Reader">this recipe</a> from 101 cookbooks. I substituted whole wheat pastry flour for rye but otherwise followed it to the T. I came out with 4 thin waffles (see 3 of them above) and 15 &#8220;normal&#8221; sized ones. <strong>These were the best waffles I&#8217;ve ever made!!!</strong> The &#8220;secret ingredient&#8221; was butter. Definitely an indulgent breakfast to start the weekend on the right foot. <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

It was great for core work and minimally taxes my legs. <p>Oops, I was on custom (morning) white balance mode on my camera, shooting in the afternoon light. The blue lighting makes it a bit more mysterious looking, no? Ok maybe not, but hard boiled eggs + hummus is heaven. That I can promise you.</p>

<p>No wonder I didn&#8217;t get THAT much done. There was quite a bit of cooking going on. I can&#8217;t resist sometimes!</p>
<p>For dinner, I marinaded some chicken following <a href="http://www.foodnetwork.com/recipes/ellie-krieger/marinated-lamb-chops-recipe/index.html">this Ellie Krieger recipe</a> (missed it a few weeks ago for CEiMB) and Adam grilled it for us.</p>

<p>The marinade was great &#8211; super fresh and flavorful &#8211; perfect for a light summer meal!</p>

<p>I also attempted to grill some fresh artichokes but they came out tasting like cardboard. I steamed them for 15 minutes, then plopped them on the grill. <em><strong>Have you ever grilled artichokes? </strong><strong>Any tips?</strong></em> I really want to try it again!!</p>
<p>Since our designated veg was a giant failure, I threw together a super quick salad &#8211; <strong>mixed greens, arugula, pea shots, feta, tomatoes + walnuts, in lemon juice and basil EVOO</strong></p>

<p><strong><a href="http://www.neareast.com/#home">Near East</a> parmesan couscous </strong>was our delicious starch for the night. The company sent me 2 boxes to sample and we really loved it! The couscous came out a bit sticky which was really fun. I wonder if I can roll the leftovers into balls and do something with them. Mmm, I bet that would be pretty awesome. On the other hand, on its own the couscous was super flavorful, so maybe there is no need to mess with perfection. <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' /> </p>

<p>Since my white balance was all screwed up, this picture looks terrible but the bars were phenomenal. Mine have more sugar than Lauren&#8217;s (I used chocolate pb, 1/2 cherries/1/2 raisins, regular choc chips and rice crispy cereal &#8211; since that&#8217;s what I had on hand) but I&#8217;m okay with that &#8211; this way I can eat them for dessert and they&#8217;ll also provide me with plenty of (quick) energy before a workout. I&#8217;ll try taking some better pictures another day because these seriously were amazing!!</p>
<p>All right, are you tired yet? 			<content:encoded><![CDATA[<p>I finally joined the <a href="http://www.meatlessmonday.com/"><strong>Meatless Monday</strong></a> movement. I know a lot of you are already on board, but I was hesitant. You see, over the past year I&#8217;ve significantly increased the number of vegetarian meals in my diet (and by default &#8211; my husband&#8217;s). It was driven by a conscious decision to purchase mostly organic poultry and meats as well as grass-fed beef, which of course we can&#8217;t afford for every meal. Instead of filling in the rest of the meals with antibiotics filled, inhumanely raised meat, we decided to go meatless more often!</p>
<p>Everyone has their own reasons to &#8220;go meatless.&#8221; I believe that one can maintain a healthy body on a carnivore diet (with lean meats, omega 3 rich fish and of course portion control and a balance with veggies, fruit and whole grains) but <strong>I strongly believe in incorporating more meatless dishes into our weekly repertoire because of the impact this has on the environment</strong>.</p>
<p><em>From the Meatless Monday site</em>&#8230; Why Meatless?</p>
<ul>
<li>REDUCE YOUR CARBON FOOTPRINT. The United Nations’ Food and Agriculture Organization estimates the meat industry generates nearly one-fifth of the man-made greenhouse gas emissions that are accelerating climate change worldwide . . . far more than transportation.[<a href="http://www.meatlessmonday.com/why-meatless/#note3">3</a>] And annual worldwide demand for meat continues to grow. Reining in meat consumption once a week can help slow this trend.</li>
<li>MINIMIZE WATER USAGE. The water needs of livestock are tremendous, far above those of vegetables or grains. An estimated 1,800 to 2,500 gallons of water go into a single pound of beef.[<a href="http://www.meatlessmonday.com/why-meatless/#note4">4</a>] Soy tofu produced in California requires 220 gallons of water per pound.[<a href="http://www.meatlessmonday.com/why-meatless/#note5">5</a>]</li>
<li>HELP REDUCE FOSSIL FUEL DEPENDENCE. On average, about 40 calories of fossil fuel energy go into every calorie of feed lot beef in the U.S.[<a href="http://www.meatlessmonday.com/why-meatless/#note6">6</a>] Compare this to the 2.2 calories of fossil fuel energy needed to produce one calorie of plant-based protein.[<a href="http://www.meatlessmonday.com/why-meatless/#note7">7</a>] Moderating meat consumption is a great way to cut fossil fuel demand.</li>
</ul>
<p>Every single person can help reduce the demand for meat (especially inhumanely raised meat) by going meatless more often. I knew I was already doing my part (I know I could always do more by becoming a vegetarian but it&#8217;s just not realistic for my lifestyle &#8211; <em>we can only do our personal best</em>) but committing myself to a Monday seemed limiting. Well, I&#8217;m taking on the challenge!! I like that I can plan a whole day of meatless eats (not just a random meal here and there). I think it happens by mistake once in a while but being more conscious about it made it fun. And you know what? I had some kick-ass eats today. <p>I used light tofu, omitted the beef and rice and added broccoli to the broccolini to bulk it up. This made 3 good servings with these lighter substitutions.</p>

<p>I LOVED this meal. It was quite spicy (I used 1T of sriracha) and <strong>tasted super authentic</strong>. I could see myself ordering it at a Chinese restaurant and being a very happy camper. Some brown rice would have been great to soak up some of the sauce but I thought we&#8217;ve been eating too much rice lately so that&#8217;s why I omitted it this time. I wouldn&#8217;t hesitate to make it again&#8230; and you shouldn&#8217;t either! <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_lol.gif' alt=':lol:' class='wp-smiley' /> </p>

Adam worked from home so we got to enjoy these as a light meal mid-day. <p>I&#8217;m going to be honest. I wasn&#8217;t sure about these guys. Fresh basil and mint scares me in large amounts and the herbs were sure to stand out with such a short ingredients list. Furthermore, right before heading home to make these for lunch, I read <a href="http://thenotsoskinnykitchen.wordpress.com/2010/04/22/ceimb-two-types-of-rolls/#comments">Liz&#8217;s less-than stellar review</a> of these and got scared even more. I am happy to say everything went without a glitch! <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':grin:' class='wp-smiley' /> </p>

<p>I cut the amount of rice vinegar in the sauce by half (saw the too-vinegary complaint in several reviews) and the sauce was perfect. Nice and spicy (and a little sweet), well balanced. The rolls were an ease to roll too &#8211; way easier in fact than I thought they would be. I made sure to soften the rice paper one at a time, and then quickly stuffed it with all the cut-up veggies, shrimp&#8230; and noodles?</p>

<p>Oh yes, noodles! After taking the above 3 photos, I realized I forgot about the noodles. I made them, but they were on the other side of the table and totally escaped my mind. So now that I caught this little mistake, the other 3 rolls had their noodles. See the 2 rolls on the left in the pic below? <p>Last thing I forgot to mention, I used my mandoline to finely cut the carrots and decided to do the same with some fresh zucchini I had in the fridge. It was a good call, I&#8217;d do that again. And yes, <strong>I would make these again</strong>. Go light on the mint, heavier on the shrimp (1/roll is not enough!) and definitely keep the zucchini addition. Adam&#8217;s only complaint was that there weren&#8217;t more of these. Success! <img src='http://healthyandsane.com/wp-includes/images/smilies/icon_mrgreen.gif' alt=':mrgreen:' class='wp-smiley' /> </p>
<p>I can&#8217;t wait to make other types of summer rolls too since I now have about 300 rice paper rounds left. <strong><em>Any filling ideas?</em></strong></p>

<p>So here is the verdict on these 2 recipes. I liked the super-charge me cookies. I enjoyed the oats and the combo of the choc chips with dried fruit. I really think some tart cherries will be perfect in these. I&#8217;d even add more than 1/2 cup as per the recipe. Load &#8216;em up!!</p>
<p>The choc/pb cookies came out pretty flat and tasted a bit burnt to me. I cooked them for exactly 11 minutes as per the recipe, so I&#8217;m not sure if this was the intended taste or if something went wrong in my kitchen. I *may* make them again. We&#8217;ll see. Everyone at the first party we went to liked my cookies. We&#8217;ll see what the other reviewers will say tonight.</p>
