Help me re-energize

I’m not sure what’s going on lately, but I’ve been TIRED… like all I want is to do is sleep- tired. Hoping to avoid looking and feeling like a zombie, yesterday I decided to start my day with a super nutritious green smoothie. :)

In the blender – 1+ frozen banana, frozen blueberries, 1c water, 1c 1% milk, Greens+ wild berry burst, 8 ice cubes, baby spinach and 1/4t xantham gum and 1/8t guar gum

WORKOUT

I had a lunch meeting, which meant I had to go to the gym after work. I REALLY hate working out after work but for some reason I got a burst of energy right at 5pm. I left a bit later and found Adam on one of the treadmills finishing up his workout. It never gets old seeing my husband running! :grin: Unfortunately, the second I started running, all that energy disappeared. I was dragging. I had 4 miles with 6×200 on the schedule but I wanted to get off the treadmill a minute after starting running. I finished 6×200 with walking for recovery for most intervals (I NEVER do that!) and then got off. I probably ran a little over 1 mile instead of 4. Ugh :evil: This is my 3rd crappy run in a row. I considered quitting all together last night. Something is off with me on the running front, and I feel trapped. Maybe the 5K I’m running this weekend will be the perfect fun distance for me, and then I can get back to distance running. We’ll see how it goes. :???:

DINNER

Sweet potato gnocchi with brussels sprouts and walnuts (recipe can be found here, originally discovered through Tri to Cook)

To make this, I used the Nuovo sp gnocchi (purchased at Whole Foods). This was super quick and Adam and I both really enjoyed it. The brussels sprouts overwhelmed the sweet potato taste a bit when eaten together in one bite, but alternating bites between the gnocchi and the brussels sprouts resulted in a great balance between sweet and earthy. The walnut pieces added a nice crunch as well. Great, great dinner! :mrgreen:

Oh yes, and there was a bit of vino involved. This bottle of Cono Sur pinot noir was fantastic. So smooth. I had this glass and another splash after that. What a fun treat on a Tuesday night!

This time I ate it like dessert and enjoyed it immensely. It really is kind of a perfect bar cookie (minus the calories).

Restless

I’ve been restless all day today, in a good way. I’ve been just super happy and chipper and couldn’t sit still. I just kept day dreaming about our new kitchen, thinking about how well I’ve been doing in general with my diet and exercise this week, how awesome my blog readers are and how I can’t wait for Friday night! ;) It also helped that I had 3 things to look forward to – 1) a fun lunch date with Mary Kate; 2) a great boot camp class after work; and 3) a yummy home cooked dinner. Could you contain yourself with all this excitement? :lol:

BREAKFAST

A “green” monster + a power bran muffin

In the monster – 1/2 frozen banana, frozen blueberries, 1/2 cup skim milk, large handful of baby spinach + Amazing Grass Green Food packet… it kind of came out black but still delicious :) I loved getting so many servings of fruits and veggies by 8 am!

LUNCH

Lunch was the aforementioned date with Mary Kate at Tossed. I got a giant salad with mixed greens, grape tomatoes, cucumbers, mandarin oranges, snow peas and cajun shrimp + dijon mustard dressing on the side (I used about a tablespoon).

When I got back to my desk, despite feeling uncomfortably full, I wanted chocolate in a bad way. A little calcium did the trick. Taking vitamins is so hard. lol :lol:

MID-AFTERNOON SNACK

The craving for a baked good hit later in the day. This chocolate brownie zbar really satisfied me today. I used to eat these all the time and forgot how good they are. I think I need to stock up  – these are great and are only 120 calories!

DINNER

Dinner was unphotogenic but very delicious. I made Ellie Krieger’s nutty sweet potato soup, hosted by Popsicles and Sandy Feet this week on CEiMB. I think a dollop of greek yogurt on top would have made it a little prettier but we are all out. I tried crumbling some goat cheese on top but it just sank. :???: In any case, the soup was hearty, flavorful and just the right amount of spicy (I used 1/2 amount of cayenne). The only little problem I had with it was the texture – my peanut butter didn’t melt that well. Once in a while there were pb chunks on the spoon. Not the worst problem but I was hoping for a super creamy consistency. Probably my fault.  On the side I enjoyed 1/2 FFL english muffin with some four pepper goat cheese. A perfect meal on a cold winter night! :mrgreen:

NIGHT-TIME SNACK

Once again I haven’t had enough calories during the day. I was craving white chocolate and I was cold. I grabbed a piece of chocolate and went to the cupboard for tea… and then I saw hot chocolate packets! Brilliant :cool:

These are fancy shmancy French hot chocolate packets we got at a gourmet cheese store last year. I used 1/2 cup of 1% milk, 1/2 cup hot water and the whole hot cocoa packet to make my hot chocolate. This was so rich and satisfying that I ended up only eating 1 little square of the white chocolate. Yay for listening to my body and being reasonable around yummy foods!!

I’m going to dinner at Oleana in Cambridge tomorrow night with the hubs. Calories will not be counted at dinner but every bite will be enjoyed. This is how I keep myself sane! :mrgreen:

Sporatic posting

Hi guys! I’m sorry for being MIA yesterday. We’re closing on our new condo this Friday and moving on Sunday, so packing has really taken over my life. I’m trying to balance that with work, working out, cooking and still eating healthy and it hasn’t been easy. I feel like we’ve been in denial about packing for a little while now (although our apartment is already filled with boxes most of the stuff definitely still needs to be packed) but there is not much time to procrastinate any longer. Blogging may have to take the back seat for a little while and will get sporatic. Hope you stick around :)

Here are yesterday’s eats. I tried the Amazing Grass original powder and didn’t hate it! I really thought it would taste like dirt, but in a smoothie with bananas, mango, mixed berries, milk and white grape juice, it just tasted like fake protein powder. With all the amazing stuff that’s in this powder (wheat grass, barley grass, rice protein, hemp protein, acai, carrot, blueberry, goji, rose hips, maca, banana + various enzymes) it could be worth a purchase to bulk up breakfast on occasion. I have a few other samples, including the chocolate flavored kind, so we’ll see if I become an addict by the time my stash is gone ;)

Random discovery: a red grape covered in the toasted almond hummus tastes like a maraschino cherry. I’m actually a sour cherry kind of a girl but I thought it was fun :) I just had 1 of these for experimental purposes :lol:

It was a great salad, but my sweet tooth wanted to be satisfied too. I reached into the desk drawer for some chocolate and found a fudge brownie. Sweet! Totally forgot I stashed it there. :mrgreen:

Sorry for a lack-laster post. I went to an amazing restaurant on Sunday and am dying to do a restaurant review post (even if you don’t live in Boston, the pictures will make you hungry!) but that will have to wait. Hope you’re having a great week. I’ll try to post as often as I can but I can’t promise much at this point. I’ll be better next week :D

Challenges challenges

Sorry for the lack of post yesterday – Adam and I decided to go on a little impromptu date at Bertucci’s. Let’s just say I was not on my healthiest behavior yesterday (or these last couple of days) but today is a whole other story. As always, when I get back into the swing of things, I feel great! I feel like I’m taking care of myself while nourishing my body with not only nutritious foods but also crazy delicious foods :D

Now, before I get into today’s eats, let’s cover a few things I wanted to mention….

1) I joined Annabel’s This Ain’t No Freshman 15, this is the Final 10 Challenge. I’d like to lose more than 10 lbs but honestly I’ve been trying to stay away from the scale. I know when I’m being good (I see results in my body, not just on the scale) and I know very well when I’m being bad. I would really really love to lose 10 lbs by August 1st, but instead of concentrating on the number I chose a different goal – I decided to stop my mindless eating and bingeing as part of the challenge. I just think if I get rid of this nasty habit, everything else will just really fall into place. I truly love exercise and I love healthy eating (in general) so the weight eventually would have to come off. Well, I’m sorry to report I already fell off the wagon! :( That means I’ll have to donate $50 to a charity of my choice (because I didn’t meet my goal) but that does not mean that I’m going to give up on it! I will continue with the challenge and report back here. I am motivated to stop this horrendous cycle! :)

2) Reading about Heather’s Cleaner Life Challenge also inspired me today. At first I was like: “Oh I could never go for 30 days without sugar and white flour without blowing my brains out!” but then I thought about it. I mean, really thought about it… and I think I want to try! :) I am going to NYC this weekend and I plan on enjoying it to its fullest, so the challenge will begin on Monday, June 15 (hey I kind of like this round number ;) ) and will go on for 30 days. Here are my rules – they are much looser than Heather’s but it’s still going to be a challenge for me. Baby steps.

  • No tofu, less soy in general
  • Organic dairy after I run out of the stuff we already have at home (I just stocked up on chobani – which is not organic!).
  • Organic meat to the extent possible. *Organic meat is crazy expensive and my husband likes meat most nights with dinner (and I cook for both of us the same thing). Once I run out of the stuff we already have, I will try to find a way to eat organic meat.
  • No artificial sweetener, except for gum. I already cut out artificial sweetener out of my diet (except for a very rare diet coke here and there) but I really like chewing gum and unfortunately it contains artificial sweeteners. I don’t think this small amount will kill me.
  • No white sugar!!!!!!!! Ok this is by FAR the hardest part of the challenge! I will allow myself up to 1 Holey Donut a day. I just put a purchase in that will arrive next Tuesday. I was really looking forward to them and I know I will go crazy if they are in my freezer, mocking me. I think having a treat waiting for me at home will also help with avoiding other treats with white sugar in the ingredients list. Let’s hope :)
  • No white flour (second hardest challenge) – again 1 Holey Donut a day is the exception.
  • No white rice or white pasta
  • When purchasing produce, consult the Shopper’s Guide to Pesticides. If it’s in the top 20, only buy if it’s organic. Otherwise, try to buy organic whenever possible. If it’s not organic, it should be at least local.
  • Avoid highly processed foods.
  • Continue to replace conventional cleaning products with environment friendly counterparts
  • Replace current body products (lotions, washes, etc.) with 100% natural products, with the exception of my prescription acne medication

Oh and I should mention there are a few very special occasions happening over the next 30 days, including my first year wedding anniversary (!!!), my dad’s birthday, the 4th of July, and potentially a special dinner with my parents. On those days/meals, I will allow myself to fully enjoy myself and that will inevitably lead to some white sugar consumption. Yep, I’m a junkie but I’ve been waiting for nearly a year to eat the top of our wedding cake, and I will not wait 1 extra day to do it!

BREAKFAST

I started the morning on the right foot with this green monster. This was the best batch so far… I’m getting good at this :razz:

Looks like every other monster, but this guy had 1 frozen banana, 1/4 avocado, 2T ground flaxseed, 1/2 cup soy milk, 1/2 cup water, 1 scoop of vanilla Whey Protein (key!!), a bunch of ice and a bunch of baby spinach (maybe 3 cups?). It was so creamy and delicious. It was definitely the Whey Protein. I think it may have junk ingredients, though. It’s really old so I just decided to use some up because I wanted this breakfast to last me through the morning without other solid foods. It did! It will likely not qualify for the Cleaner Life challenge though. :(

LUNCH

Oh my – this was such a delicious sandwich. I bought some fresh mozzarella at the farmers market the other day (it was made that morning! SO cool!!) and used up the leftovers in this yummy sammie with prosciutto and balsamic vinegar on TJ’s sourdough bread. I also packed up an organic fuji apple, which I ended up eating as an afternoon snack.

DINNER

Dinner was the perfect way to end the day! I made pasta with zucchini and toasted almonds using this recipe from Cooking Light. This was from Cooking Light’s 20-minute meals section, which I’ve loved in the past and this meal once again blew me away. Fresh pasta with zucchini, grape tomatoes, garlic, cheese and almonds… I mean how could I NOT love it? ;) Adam bought his pasta and it wasn’t whole wheat, but boy was it delicious! Once in a while regular pasta is ok, I think. I can’t wait for lunch tomorrow when I get to eat the rest of the leftovers :)
