Where did those (not) food blogging hours go?

December 2nd, 2010 · 30 Comments · baking, chicken, Cooking Light, eggplant, favorite recipes, fish, salad, sandwich, side dishes

I can’t believe it’s only been two weeks since my last post. I seriously feel like I haven’t blogged here in ages (although I did continue with regular posting on Russian Bites. Sorry, gotta self-promote. You understand, right? πŸ˜‰ ). Blogging has become such a large part of my life, that days after days away felt like months. I even had time to get into a short (food) rut for a week there. Maybe it was the rebel in me. Oh you don’t have to take pictures of food for the next few weeks? Fine, how about you eat crap then?! I dug myself out of that hole relatively quickly though (I mean, the whole break was 2 weeks and the last week I was a cooking and baking maniac so I’d say I got my mojo back  ). I’m going to go ahead and say that that’s what my body wanted and move on, because I’m back. Ooh yeah.

So let’s see, what have you missed…

Eggplant “meatball” subs (it tasted like eggplant parm in a baguette!)

Dover sole picatta (I used this recipe, originally found through Meals & Moves, but of course subbed fish for chicken).

I actually made the chicken version first and it was so amazing (quick and incredibly flavorful and healthy!) that I wanted to try it with other proteins. Fantastic recipe! It’s definitely going to make the best of 2010 list! Saucy…

Btw, here is the chicken version :)

Also, after over a year, I finally made the brussels sprouts recipe everyone raved about after the 2009 Foodbuzz festival. I know I’m late to the party but it was worth it! :) No leftovers here…

Thank you, Shannon, for all the weirdo ingredients! I used pancetta instead of guanciale.

There was one baking disaster – protein banana muffins, aka banana flavored rubber in muffin form πŸ˜‰ [I won’t link to the recipe I modified… and clearly screwed up.]

There were definitely baking successes. Oooh yeah. In cupcake form. Namely oreo cupcake and margarita cupcake form. Yes, you read that right and you should really find an excuse to make them right away. Especially the margarita ones. Tiffany, you are a genius for setting up a cupcake party!

I also met one of my baking idols – Joanne Chang, the owner of Flour bakery. But you probably already know this if you like me on Facebook (you do, don’t you?).

I spy someone on the right πŸ˜‰

I already bought all the ingredients for the granola bars. Can’t believe I get to make them myself!!

Ok, looks like there were even more sweets. Chocolate sausage:

… and FRIED food? Say what? Hey it was for the blog! 😎 Chicken Kiev:

… and I did have salad with it!

In fact, based on what’s on my camera, there were a few salads…

Mixed greens, grapes, grape tomatoes, goat cheese, pecans and rotisserie chicken (my new favorite thing… I get 1/2 a chicken at Whole Foods for just $5 and it lasts a few days!!)

Mixed greens, strawberries, tofu, pecans and goat cheese

And here is that chicken again in a chicken salad with dried cherries, walnuts and greek yogurt

Aside from the food, there were a few workouts. But not nearly as many as I wish there were. I’ll talk more about my lifting program in a separate post. Gotta give you something to come back to.

How have you been? Did you miss me? πŸ˜‰

I missed you, although not blogging didn’t really free up my schedule as much as I thought it would. Watching tv is extremely time consuming. πŸ˜†

If you have a food blog, do you think you’d eat differently if you took a break for 2 weeks?

Wow look at all that food! I missed you. Excited to have you back.

Although I’ve been keeping up with Russian Bites, I have missed Healthy and Sane! Looks like you’ve been enjoying some awesome meals lately. I also love the convenience of rotisserie chickens, and enjoy coming up with various meals to include the cooked meat into.

When I switched from a food journal-themed blog to a recipe-only blog, I was slightly concerned that I would veer off the healthy eating track… but it turned out that my habits stuck. I did love not having to photograph every single meal I ate! That’s when I knew the journal was no longer for me :).

    I missed you!

I think I’d eat exactly the same. I don’t post my daily eats, so I don’t think anything would really be different if I didn’t blog.

  • #4 - Michelle

I have missed you! I definitely take breaks when I’m sick and have little to no motivation to cook!

Lots of great food in this post!

I don’t post about what I eat, so I wouldn’t eat very differently. Although when I’m doing my meal plans, I do always try to put in new recipes so I can blog them, so maybe it would be different…

so much deliciousness!! those cupcakes look SO professional, and your photos are looking ever so lovely :) i need to get me one of those lights, lol. glad you liked the brussels sprouts!!

    • #7 - Elina

Shannon – most of these food photos were still taken outside (I’m sure you can guess which ones were not). I AM migrating indoors from now until next spring. I got a new tripod and plan on getting a new (less crazy) light this weekend so hopefully that combo works. I’ll blog about my new set-up if I feel like it’s making a difference!

YAY so glad your back!! We missed you!
The cupcakes came out amazingly, what a fabulous idea for a party!
I totally agree about getting a rotisserie chicken, its good for so many meals.
So fun that you met Joanne!

Welcome back! I probably wouldn’t eat any differently if I wasn’t blogging… but a good break is always nice.

  • #10 - MelissaNibbles

I’m impressed you still took pictures. I don’t post most of my eats because I don’t ever want to feel like I’m eating for other people if that makes sense. Welcome back!

    • #11 - Elina

Melissa – this is only a fraction of the food I ate so I only took pictures of *some* stuff (and there is more to come in a separate post). Believe me, there was a lot more.
What you’re saying makes sense but I have a different agenda… I want to share delicious healthy (and sane) recipes (and pictures) with the world! πŸ˜‰ [And not taking pictures of every bite still allows for plenty of messy looking meals “just for myself.” :) ]

I am definitely making that Eggplant ‘meatball’ sub for lunch today, I think I drooled a little bit looking at it. Those oreo cupcakes sound amazing, and your salads look seriously restaurant worthy. Glad to have you back! :)

Wow… you’ve been holding a lot in! So glad you got to meet Joanne… she’s amazing! If you need any advice on those granola bars, you know who to ask. πŸ˜‰

Of course we missed you. :-) I have to admit I’ve been a bit swamped with work and haven’t been the best at keeping up with Russian Bites, but adding it to my google reader so it’s no longer a problem. I asked for a iPad for xmas so I cannot wait to get it so I can do my blog reading on the train.

    • #22 - Elina

Ooh, reading blogs on an ipad would be amazing. I read some on my iphone but you can’t really comment. An ipad would be perfect. Your blog RSS feeds are still not fixed for me :(

when i was home over thanksgiving i baked with my mom – not taking pictures while doing was refreshing change. i love blogging but sometimes taking a picture during every step of the recipe can really be time consuming

    • #24 - Elina

The step-by-step photos are killer. I swear it takes 4 times as long to make something!
